The ingredients you will need are shrimp which have been peeled and deveined with the tails removed, all-purpose flour, egg yolks, seltzer or club soda, vegetable or peanut oil for frying, and dipping sauce.

For the batter, in a medium bowl whisk together 1 cup of all-purpose flour, 1/2 teaspoon of salt, and 1/4 cup ice water. Continue whisking the batter until it is thick and smooth but still pourable.  In a small bowl, lightly beat 2 egg yolks. Gradually stir the egg yolks into the flour batter until fully combined.

Pat the shrimp dry with paper towels and set aside. Heat 3-4 inches of oil in a large heavy pot or Dutch oven to 350 degrees F.

Working in small batches, lightly coat the shrimp with flour, shaking off any excess. Dip each floured shrimp into the batter, allowing the excess to drip back into the bowl.
